Pecan Crescents

Ingredients:


1 cup butter -- * see note 1

1/2 cup powdered sugar

2 teaspoons vanilla extract

1 cup chopped pecans -- finely chopped

1 3/4 cups all-purpose flour
 

Preparation / Directions:


Butter must be room temperature. To easily prepare nuts, run them through meat grinder. In a large bowl, beat butter, sugar, and vanilla with mixer until fluffy. Add nuts and mix until blended. With mixer on low, gradually beat in flour just until blended. Form a long even roll, wrap in plastic wrap, and refrigerate 1 hour or until firm enough to handle. (or overnight) Preheat oven to 300 degrees. Have ungreased cookie sheets ready. You may use baking parchment. Divide dough into 8 equal pieces. Put 7 of them on a plate and place in refrigerator until needed. On a lightly floured board, roll one piece of dough into about a 12-13 inch rope. Cut each rope into 8 pieces. TO FORM CRESCENTS: Taper both ends of piece, then curve into crescent moon shape. TO FORM MOUNDS: Roll each piece into a ball. (They'ill flatten a bit in baking) Place 1 inch apart on ungreased cookie sheets. Bake 18-20 minutes or just until golden. Cool on a wire rack. Serving Ideas : Freezes very well. Keep a supply for unexpected compan
